Filling
- 118.29 ml finely chopped fresh chicken meat
- 118.29 ml rehydrated dried black fungus
- 118.29 ml cooked bean threads
- 118.29 ml chopped white onion
- 118.29 ml fresh crabmeat
- 118.29 ml raw chopped shrimp
- 118.29 ml shredded carrot
- 118.29 ml bean sprouts
- 1 egg
- fish sauce, to taste
- 1.23 ml white pepper
- 8 sheet rice paper, round (or more, as needed)
- vegetable oil (for frying)
- assorted fresh vegetable, and herb platter to eat with spring roll (red leaf lettuce, mint, cilantro, basil.)

Nwoc Cham (Dipping Sauce)
- 59.14 ml shredded carrot
- crushed red pepper sauce, to taste (Tuong Ot Toi)
- 14.79 ml lemon juice
- 4.92 ml granulated sugar
- 118.29 ml boiling water
- fish sauce, to taste
directions
- For filling: In a bowl, mix together the chicken, black fungus, bean threads, white onion, green onion, crab meat, shrimp, carrots, bean sprouts, egg, fish sauce and white pepper. Set aside.
- Dip each sheet of rice paper in warm water and place on a clean towel, just as you are ready to fill and roll.
- Put sheet on a flat surface. Put about 1/4 cup filling across bottom 1/3 of rice sheet. Fold 1/3 of sheet on left side over mixture and repeat with the right side. Starting at the bottom, carefully roll up as tightly as possible. Place spring rolls on platter.
- When all spring rolls are completed, heat 1 to 2 inches of vegetable oil in a wok or deep skillet to 350 degrees. Place spring rolls in the hot oil folded side down to keep them from breaking. Cook 2 to 4 minutes per side or until they are a golden brown and ends are brown indicating that the ingredients are done. Drain and serve immediately.
- For dipping sauce: Put carrots, crushed red pepper sauce, lemon juice and sugar in a small serving bowl. Pour the boiling water over the ingredients. Add the fish sauce to taste. Stir to mix. Serve.
- Makes about 8 spring rolls.

I am a middle aged foodie who has had the luxury of living all over the world except asia. Lived in or grew up in Nigeria, Kenya, Chicago, Russia,and haiti. born in New Zealand, brother born in Austria and many more.
I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking.
My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely. I love him dearly
