Ok, you and your son have excellent taste!! My 4 yo was pestering me for dessert tonight after dinner, but I was all cooked out. I was looking through new recipes and thought this might do the trick. We ate it on graham crackers and it was PERFECT!! It was sort of light and fluffy and didn't have an overpowering peanut butter flavor. I frequently feed DS peanut butter & apple butter sandwiches, so I imagined that's what this would taste like, but it is MUCH better!! DS said "That dessert was better than popcorn." VERY high praise from my son!! Thanks!
As a little girl, I grew up watching Mr. Rogers, and love this recipe. It brings wonderful memories of childhood, and is also healthy. Thank you for sharing.
My 2 & 4 year old boys loved this snack! We used Back to Nature graham cracker sticks to dip with. Easy little afternoon snack!

I haven't tried this, and this is sort of unrelated - but I just had a Mr. Rogers flashback. He made this "cakes" out of thin chocolate layers layered with cool whip, and then frozen. My mom and I looked all over town for the chocolate wafers and finally found them, and we made the cake in a pyramid shape and it was so yummy scrumboes. Isn't Mr. Rogers great?
