Mr. Food's Date Nut Bread

"I love date nut bread spread with cream cheese or by itself. I'm posting this for safe keeping because I really want to try it soon. It sounds yummy!"

• Serves: 8-10

ingredients

• 2 cups dates, pitted and chopped
• 2⁄3 cup firmly packed brown sugar
• 1⁄2 cup honey
• 2 tablespoons butter or 2 tablespoons margarine
• 1 cup very hot water
• 1 egg, beaten
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1 cup chopped walnuts

directions

1. In a large bowl, combine dates, sugar, honey, and butter; add hot water, stir and let stand for 15 minutes.
2. Preheat oven to 325 degrees.
3. Stir egg and vanilla into date mixture.
4. In a separate bowl, combine remaining ingredients.
5. Stir the flour mixture into the date mixture.
6. Pour batter into a greased 9x5 inch loaf pan.
7. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
8. Cool in the pan for 10 minutes, then remove and let cool completely on a wire rack.

If you haven't tried this bread yet, please do! I wasn't sure how it would turn out with just 2 tablespoons of butter but I shouldn't have worried. It rose beautifully and had a perfect "quick bread" texture. Out of necessity I made two changes to the recipe - I used agave nectar instead of honey (my honey bear was almost empty) and I baked it in a brownie pan because I didn't have the right size loaf pan. It was done in about 25 minutes and wasn't overly sweet. I ate mine plain but I bet it would be good with a little sweet butter on it. I love this bread!
