  • Arrange the mozzarella and tomato slices onto individual serving plates.
  • Blanch and refresh the zucchini and eggplant, then combine with the black olives.
  • Pile spoonfuls into the centre of each plate, mix together the dressing and pesto then drizzle over the salad. Season with plenty of black pepper.
  • Serve immediately.
