Moxie's Walking on Sunshine Salad

"This salad was posted by my dear friend, Moxie. I'm not changing a word here. "My mom used to make carrot, apple & raisin salad like this when I was growing up. I came up with this fresh-tasting version one summer afternoon when I had fresh carrots & basil from the garden and was looking for an easy side dish for lunch. My daughter loved it -- but don't give it to kids under 1 because of the honey.""

  • Grate carrots, and combine in a bowl with raisins, pineapple chunks and basil.
  • Whisk honey, lime juice and ginger together and mix with other ingredients.

  1. I made this dish this afternoon for dinner this evening, allowing it to chill for a couple hours before serving. I used Sweet Basil, fresh from my herb garden. I was a little nervous that DH wouldn't like it, but was pleasantly surprised when he cleaned his plate! I really enjoyed it myself, which I had expected. The colors contrasted so nicely; it was very eye appealing and had lots of flavor that blended extremely well. Best of all, it was quick and easy too! DH even commented on all of these features too. Thank you for sharing this moxie. It was great!!!
     
  2. I made this to accompany our burgers for the 4th. We really enjoyed this one. Different from the usual carrot raisin salad. Refreshing and sweet with a twist. (how would have ever thought to add fresh basil?)Easy to prepare and a great side! Moxie you knocked our socks off!
     
  3. This is a simple, refreshing salad! Definitely a nice change from the usual lettuce mix. I think I may try it without the basil next time, since my mother and I agreed it was a little bit overpowering. But it was still enjoyed by all. Thanks for a great recipe, Moxie! Update: I tried this again, over a year later, and had to up my rating to 5 stars. I doubled the rest of the recipe and left the basil the same and it was perfect for my family's tastes. I took it to a baby shower and got lots of compliments! Thanks again!
     
  4. Just for the record, I used a can of Tropical fruit salad, "Fun Sea Shapes" instead of the pineapple. It is just papaya and pineapple cut into "fun sea shapes". I did not know if you were surpose to drain it so I did. I also used key lime juice because that is what I had. We loved this salad, very different and tasty. Leftovers for lunch was very good the next day.
     
  5. Delicious colourful salad. I didnt have any raisins so subbed sultanas. We really liked the flavours in the dressing, tart, sweet with that hint of ginger..scrummy!

The little cutie here is Martha, the sweet lady I was blessed to have worked with for two years. Martha passed away on 12/3/08. Martha and I would ride endlessly during the holidays, and she would sing carols and laugh and just enjoy it so much. I know this holiday season, she will be with her brother, son and mother and finally be "home". Martha, I still love you more. ******* I'm a simple girl, born of good stock. I'm the mamma of two spoiled tuxedo cats: Beauregard and Patches (the one who's been drinking eggnog). They love cuddling together, and this picture is taken on my hall steps. I'm a firm believer in LOA. I need to get more dedicated to daily practice. Below is a film that explains it, and is wonderful.
