Mother's Rhubarb Crunch

  • Mix the flour, oatmeal, brown sugar, butter and cinnamon until crumbly.
  • Press 1/2 of the mixture into a greased 8x10x2 glass dish.
  • Cover mixture with diced rhubarb.
  • Combine the sugar, cornstarch, water and vanilla in a saucepan.
  • Simmer until thickened.
  • Pour over fruit.
  • Cover with remaining crumb mixture.
  • Bake 1 hour in 350°F.
  • Serve warm with a scoop of vanilla ice cream.
