This is a non-alcoholic version Mai Tai "Mocktail"
- 1⁄2 cup pineapple juice
- 1⁄2 cup club soda
- 1 tablespoon grenadine
- 1⁄4 cup orange juice
- 1 tablespoon cream of coconut
- Shake or stir to blend.
- Pour over crushed ice.
- garnish with a pink umbrella.
Good flavor, but a little too sweet for me. Also, that cream of coconut is a royal pain to use--even at room temp all the coconut was congealed at the bottom of the can and wouldn't mix in. I had to transfer it to a dressing shaker to mix it up. Next time I'll just use coconut milk--less hassle, and not so sugary. It didn't really /look/ like a mai tai, but it was still a tasty, tropical drink (if rather pink). DH didn't like it, but he didn't like mai tais when we still drank alcohol. DS loved it, though. I think I'll be making this again, with some adjustments to better suit our tastes.
thanks i like cocktails but sometimes not the booze its a good combo and your other recipes are good too
I used freshly squeezed orange juice and it was a refreshing drink. This is a keeper. Thank you for sharing.
