  1. Mash garlic with salt to make a gritty paste, Add avocado and mash some more.
  2. Pour lemon juice over avocado so that it will keep its color.
  3. Stir well.
  4. Add olive oil, add Louisiana hot sauce, stir, add Lea & Perrins Worcestershire sauce, stir, and add wine vinegar.
  5. Stir.
  6. Add Mustard.
  7. Stir.
  8. Crumble a good quantity of feta cheese in the dressing.
  9. Add chopped tomatoes and parsley.
  10. Stir well and serve over lettuce.
  11. This is also good for dipping.

I took a second glance at feta listed as an ingredient in guacamole. I love feta but never would have thought of it in this dish. I omitted the olive oil and used a small amount of Dijon (it did round out the flavor and add some creaminess). I used this a as a basis for Avocado and Feta Cheese Salad Wraps Recipe #152395 for which I added chopped bacon, lettuce, sunflower seeds, and put it in a tortilla. It was sure an outstanding wrap. Absolutely wonderful guacamole!!! This is the first guacamole i have made where the other ingredients did not compete for all the attention and instead complemented the avocado. Wonderful flavors! I did not add the Feta to the guac, i topped it with crumbled feta. Perfection! What a find! Thank you!

I must admit that I was skeptical with all the different ingredients but everyone loved this guacamole, including kids. The feta and dijon add a nice subtle tang. We served with tortilla chips. Thanks for a new guacamole for my files.
