Morty's Amazing Chocolate Cake

"After coming across a version of this recipe years ago and playing around with it, this is now the only chocolate cake I ever make! I have given it to friends who also say the same thing."

ingredients

• 1 3⁄4 cups flour
• 2 cups sugar
• 3⁄4 cup cocoa
• 2 teaspoons baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon vanilla essence
• 2 eggs
• 1 cup strong black coffee
• 1 cup milk
• 1⁄2 cup oil
• 1 tablespoon vinegar

directions

1. Sift dry ingredients into a bowl.
2. Whisk all wet ingredients together in a separate bowl, then whisk into dry ingredients until well mixed and it's a smooth thin batter.
3. Pour into a large, greased lined cake tin and bake for about 1 hour at 180 degrees celcius.

This cake had a good flavor but the final product was a bit dry. I should have cooked the cake for less time. Since the instructions said to bake an hour on medium heat and my oven doesn't have a "medium" setting, I baked the cake in a 9 x 13 pan at 350 degrees for 40 minutes. I think that the ideal baking time for the cake is probably somewhere between 30 and 35 minutes. Possibly increasing the amount of oil in this recipe might add additional moistness to this cake ask well.
