Moroccan Roasted Salmon With Mango Salsa

  • 1 12 cups chopped peeled mangoes (about 1 large)
  • 2 tablespoons finely chopped red onions
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons orange juice
  • 1 12 teaspoons harissa (a hot red pepper sauce)
  • 4 salmon fillets, skinned (about 1 1/2 pounds total)
  • 14 teaspoon salt


  1. Preheat oven to 450º.
  2. Combine chopped mango, onion, mint and orange juice in a bowl. Cover and chill.
  3. Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
  4. Serve with the mango salsa.
