Moroccan Garbanzo Bean and Feta Pitas

"From an old Bon Appetit...and posted for ZWT #6. This makes a delicious summer lunch or light dinner. As an alternative eat it as a salad instead of stuffing the pitas. Serve with: Romaine salad and bowls of mixed green and black olives."

  • To make the vinaigrette, whisk together olive oil, white wine vinegar, and spices in medium bowl. Place drained garbanzo beans in large bowl and mix in enough vinaigrette to coat. Let stand 20 minutes or up to several hours to allow flavors to blend.
  • Add tomatoes, cucumbers, feta cheese, red onion, and parsley to garbanzo beans. Mix in additional vinaigrette to coat. Season bean salad to taste with salt and pepper. Fill pita halves with bean salad and top with dollop of yogurt. Place 2 pita halves on each of 4 plates; pass remaining vinaigrette separately.

  1. This made for a very flavorful, tasty lunch. I made this recipe exactly as written. I think next time, I would cut back a little on the oil, as I ended up draining a bit of it out at the end. I particularly enjoyed the dollop of Greek yogurt. Don't skip it. I'm looking forward to my leftovers. Made for Photo Tag June 2013.

  4. Anything that combines pita and chick peas is usually delicious and this is just that! Lovely combination of spices! I really like how fresh it is and yet so full of flavor. I didn't have any cucumbers which would have made it really good... next time I'll have to try it out with the cucumbers.:) Thanks for sharing. Made for ZWT6 Queens of Quisine!!

I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area. I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club. I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun. I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
