  • Combine orange juice,lime juice,salt and pepper.
  • Whisk in 3 Tbls olive oil and set aside.
  • Quater the fennel bulbs length wise and slice thinly.
  • Place in a bowl and add the sliced onion and radishes.
  • Toss in some of the dressing,then add the watercress and rocket.
  • Serve the salad on the butter lettuce.
  • Looks very pretty served in individual glass bowls.

  1. Healthy and delicious! The dressing takes the sharp edge off the radishes and onion, and brings everything together. I went ahead and added the orange segments to the salad after grating the rind. I served this over the watercress, but omitted the arugula and butter lettuces.
     
  2. So good! Super easy. I made it for a dinner party and received rave reviews. I couldn't find watercress the first time I made it, I used arugula and butter lettuce for the greens and it was just fine.
     
  3. I didn`t have radish so it was skipped. I used a vadalia onion. I added 2 Clementine seperated the segments. Lots of flavor and texture.
     
  4. You know I just had a bit of arugula in this (no other lettuces) and served it with#19901 Taste of Morocoo and LOVED it. The fresh crunch of the fennel with the thick spicy curry was perfect! Will make again.

On my to do list is learning to quilt,knit fair isle and bottle preserves properly! I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
