This is a great appetizer, snack, or instant light meal.
- 1⁄2 lb carrot
- 2 cups orange juice
- 1⁄3 cup lemon juice
- 3⁄4 cup water
- 1⁄2 cup sugar (more or less to taste, or sweetener may be substituted)
- Blend until the carrots are shredded, don't pulverize them!
- Serve VERY cold in a juice glass with a spoon.
This was very easy to make - I had most of the ingredients on hand already! I omitted the sugar - it's quite sweet without it. It's a bit pulpy though, with all the carrots in it, so be prepared for that. I would perhaps put less lemon juice in next time - it's very tart. It's a great way to eat your carrots!!
