This is a great appetizer, snack, or instant light meal.

Ingredients Nutrition

  • 12 lb carrot
  • 2 cups orange juice
  • 13 cup lemon juice
  • 34 cup water
  • 12 cup sugar (more or less to taste, or sweetener may be substituted)


  1. Blend until the carrots are shredded, don't pulverize them!
  2. Serve VERY cold in a juice glass with a spoon.

This was very easy to make - I had most of the ingredients on hand already! I omitted the sugar - it's quite sweet without it. It's a bit pulpy though, with all the carrots in it, so be prepared for that. I would perhaps put less lemon juice in next time - it's very tart. It's a great way to eat your carrots!!
