      Great recipe Diana...I substituted Red Wine Vinegar with fresh lime juice and the dish tasted just perfect. Not to forget the added bonus of low cals as well! :-) Mini I could savour them without guilt.

      Very nice vinaigrette!! Wonderfull on the carrots, made these this morning for supper tonight, couldn't resist tasting ahead of time, it is a great combination of flavours that compliment the carrots. These will go on my list for over the holiday season, thanks for sharing Di!!

      I really enjoyed this dish just as described. The paprika & cumin were a delightful combo. I did serve it with a spicy (hot) entree & mixed them in with the main dish, so perhaps I'll add a little cayenne next time if I serving with something more mild.

      I love to experiment and this dish looked sooo good. Upon eating it I found it wasn't going to make it to my personal favorites but the family members who loved it really loved it and the rest ate it but the cumin got to them a tad bit. It was very easy to put together and looked sooo pretty. I think that if you like cumin you will love this dish if cumin is not a favorite then keep looking for that perfect carrot dish. The family members who loved it took the recipe home with them and I know they are going to be making it again and again.

      This has to be the best carrot recipe I've made. I love the vinaigrette. The seasonings were perfect, I wouldn't change a thing. Thanks for a great recipe DiB.
