- In a small mixing bowl, cream butter and brown sugar. Add eggs and sour cream; beat well. Stir in the carrots, coconut and raisins. Combine the flour, baking soda and cinnamon; stir into creamed mixture just until moistened. Fold in nuts.
- Fill greased or paper-line muffin cups three-fourths full. Bake at 375 for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm.
these were good and packed with goodness too! i used prune puree instead of butter and used whole grained flours (talk about a fiber kick!) but other than that i followed everything the same.. i cooked mine for barely 20 min and they were a tad overdone.. so watch closely.. but all in all a good healthy fun muffin.. thanks! oh i also added some vanilla
