      Fantastic recipe! Went gluten-free with ease! Only subbed honey in for molasses (as some don't appreciate that flavor too much here)...but followed the recipe otherwise. Amazing how moist they are with so little oil! A great find! THANKS!

      Just wonderful muffins - I added sultanas instead of prunes but made no other changes. These will go into school lunches in the coming week. They are moist and golden and really wonderful. Made for ZWT 5.

      These muffins are so easy, and I had all the ingredients on hand. They bake up moist and sweet from the carrots, applesauce and prunes, and have a nice dense texture thanks to the oatmeal. I feel good starting out the day with one of these! Thanks for the healthy recipe!

      These were baked in my silicone muffin pans. A combination of whole wheat pastry and all-purpose flour was used. Not having light molasses, sorghum was used and Splenda brown sugar blend was substituted for the brown sugar. The milk, applesauce, sorghum, oil, egg and dried plums were put into the Vita-Mix and blended before pouring over the dry ingredients. These muffins bake up moist and delicious with a hint of sweetness.
