CONGRATS ON YOUR FOOTBALL WIN 2010! I'm so glad I picked this recipe. I really enjoyed the combination of the flavors and textures. I did reduce the amount of coconut only because it isn't a favorite with me. I have given several muffins away and everyone loved them. I've saved a few in the freezer as well. Thanks for a great new treat!

These were wonderful healthy muffins and tasted great and not overly sweet. I did make some change though. I replaced 1 cup of the flour with whole wheat flour. I ended up using sweet instead of tart apples, so I only used 1/2 c of sugar. I omitted the coconut because we don't care for it. And I used olive instead of vegetable oil. Very tasty and healthy.
