Another recipe from the "Muffin Lady" from our church.

Ingredients Nutrition


  1. Combine sugar, oil, eggs and vanilla in large bowl; set aside.
  2. In another bowl, sift together flour, baking powder, salt and cinnamon.
  3. Add to liquid ingredients and stir until just moistened.
  4. Gently fold in carrots, raisins, coconut and apple.
  5. Grease muffin tins and fill 2/3-full.
  6. Bake at 350 degrees for 20 to 25 minutes.

These are great. I will be making these again and again. Since I have problems with high blood pressure I cut the amount of baking powder in half and used ground tartar for the other half and they tasted great. I also took a hint from willij and substituted the coconut(not a big fan of it) for pecans. Next I'll try replacing the raisins with chopped dates.

I tried this recipe last night and brought them to work this morning and rec'd great compliments. I also added a half cup of chopped walnuts - in place of one half cup of the carrots. Great with your morning coffee!

For being a host of PAC S 2008 I chose to make these muffins for my DH. I chose to only use coconut, oatmeal, apples & nuts in out. Great muffins to try
