Morel Risotto

- 946.36 ml homemade chicken stock
- 29.58 ml extra-virgin olive oil
- 59.14 ml chopped shallot
- 59.14 ml finely chopped onion
- 4.92 ml thyme leaves
- 226.79 g morel, halved lengthwise
- 236.59 ml uncooked arborio rice
- 59.14 ml dry vermouth
- 118.29 ml grated fresh pecorino romano cheese
- 59.14 ml heavy whipping cream
- 2.46 ml salt
- 1.23 ml fresh ground black pepper
- 29.58 ml chopped fresh chives
directions
- Bring Homemade Chicken Stock to a simmer in a small saucepan (do not boil). Keep warm over low heat.
- 2. Heat oil in a large saucepan over medium heat. Add shallots, onion, and thyme to pan; cook 5 minutes or until tender, stirring frequently. Add mushrooms; cook 1 minute.
- Add rice; cook 1 minute, stirring frequently. Stir in vermouth; cook 30 seconds or until liquid is nearly absorbed, stirring constantly.
- Stir in 1 cup stock; cook 4 minutes or until the liquid is nearly absorbed, stirring frequently.
- Add remaining stock, 1/2 cup at a time, stirring constantly until each portion of stock is absorbed before adding the next (about 25 minutes total). Add cheese, cream, salt, and pepper; cook 2 minutes.
- Remove from heat; top with chives.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN!
