This was very tasty. About the only change I'll make for next time is to up the crushed tortilla chips a bit, and mix them into the corn to make it a little thicker!

This is awesome!! My tastebuds are doing the happy dance. I made this this evening to accompany chicken quesadilla. Very easy to make. I used a cup of mixed peppers - red,orange,green and yellow. And I added chopped black olives. Placed mixture in a PAM sprayed pie dish. Plus I found habenero doritas and crushed them for the topping. This is a definite keeper. Thanks so much for a very tasty dish!

I made this recipe using 2 cans of Mexican corn. I didn't add additional peppers and I omitted the olives. For the topping I used nacho cheese flavored Doritos. The result was absolutely delicious! This dish is nice and creamy with just the right amount of kick!
