  • Preheat oven to 180C and line two baking trays with baking paper.
  • Beat butter and sugar until light and creamy.
  • Add milk and beat until combined.
  • Add flour, custard powder and coconut and mix to form a soft dough.
  • Roll teaspoons of mixture into balls and place on trays.
  • Press down with a fork.
  • Bake for 15-20 minutes until just golden.
  • Cool on wire rack.
  • Filling.
  • Beat butter and sugar until light and creamy.
  • Add the milk and beat until combined.
  • Spread half the biscuits with half a teaspoon of butter mixture and the other half with half a teaspoon of jam.
  • Sandwich the halves together.
  • Enjoy with a cuppa!

  3. I didn't make the filling (didn't have enough jam on hand), but the cookie part turned out great. I dusted it with powdered sugar and gave it away as Christmas gifts. It looked pretty. :)
     
  4. Just made these this evening for my son and husband coming home from Hurling practice. They were devoured within minutes!! Will definitely be making these delicious treats again (mind you mine didn't look as perfect as your pic but never mind!!) update: made these again, this time left out coconut and added ground almonds, really nice!
     
  5. These biscuits are a real harking back to more old-fashioned, pre-1950s, Aussie tucker: genuine Aussie bikkies to enjoy with a cuppa! Except that I’ve never liked tea: always preferred coffee! And I’m not sure how “bikkies” (slang for biscuits) is spelt! I’ve always enjoyed these but I‘ve never had a recipe for them. They’re really easy to make, and quick. I doubled the recipe and filled half with lemon curd: NOT so traditional but I had some lemons I needed to use, and I love lemon curd. So thank you for posting this recipe, Fairy Nuff. Now I can make these whenever I like! I’ve made some to celebrate the beginning of the Zaar Tour of Australia!
