From FoodFit. Not sure why they call these monkey bars (probably because of the banana), but these are a great, easy to make, kid-friendly snack.

  1. Heat the oven to 350°F
  2. Spray an 8-inch baking pan with vegetable cooking spray.
  3. In a medium bowl, beat the butter and sugar together until creamy.
  4. Add the oats, cinnamon and flour and mix well.
  5. In a small bowl, combine the apple juice, vanilla extract and 1/2 cup of warm water.
  6. Add this to the dry ingredients and stir to combine.
  7. Stir in the banana and currants.
  8. Spread the dough into the prepared pan.
  9. Bake until the top is golden, about 1 hour.
  10. Cool on a wire rack.
  11. Cut into 12 squares and serve.
  12. These bars can be made ahead and stored in the refrigerator for up to one week.
