Monday Night Special

"This was a family favorite after a big Sunday dinner. What is great is that this casserole can be modified depending on the amount of leftovers you have."

  1. Tasty recipe. I increased the beef/gravy abit and added some frozen vegys. We like the flavour of Worcestershire sauce so I increased it too. This is a great way to use up the roast beef dinner leftovers. Easy to make & we enjoyed it, thanks for sharing.

  2. What a wonderful dish to use up those leftovers! So easy and so tasty too. The only thing I changed was to use a teaspoon of dried chopped onions since I wasn't sure raw onion would get done in the time listed. I have just enough left for my lunch tomorrow and I'll be making the others jealous. Served with a green veggie and crusty bread, we were happy campers. Thanks for sharing this winner!

  3. I actually made this last night making it a true Monday Night Special! Fast and easy. A great way to use up leftovers without having to add a bunch of extra ingredients. I made it in a 9x9 glass baking dish and it was quite full so I made sure the mashed potatoes were sealed well around the edges. Thanks for sharing. *Made for Fall Pac 2008*
