Our garden is filled with zucchini right now so my dear mom gave me this recipe. I made these for the first time this weekend and took them to a BBQ, everyone gobbled them right up! Delicious!!
- 4 zucchini, unpeeled,sliced thin
- 4 eggs, slightly beaten
- 1 clove garlic, chopped
- 1 cup Bisquick
- 1⁄2 cup onion, chopped
- 1⁄2 cup parmesan cheese
- 1⁄2 cup vegetable oil
- 2 tablespoons fresh parsley
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon season salt
- 1⁄2 teaspoon oregano
- Heat oven to 350.
- Grease bottom and sides of 9x13 glass dish.
- Stir all ingredients together well.
- Pour evenly in dish.
- Bake 25 to 35 minutes.
- Let cool and slice into square pieces.
I could eat this everyday!!! It almost tastes like a quiche. I cut the recipe in half and cooked it in an 8x8 dish. Will be making this one again!
Yum! We were given a bag of zucchini. This is a lovely way to use it. I did reduce the oil by half and it still worked fine. Good stuff. And it is great for breakfast next day,too.
This tastes like homemade dressing. It is so yummy! We will keep this recipe handy.
