- 2 cups kidney beans (Unico)
- 1 cup bell pepper, cut up (whichever colour you have)
- 1⁄2 cup red onion, chopped (or more to taste)
- 1⁄2 cup canola oil
- 1⁄2 cup red wine vinegar
- 1⁄2 cup sugar
- 1 teaspoon salt
- 3 teaspoons pepper
directions
- Rinse beans.
- Dice veggies.
- Combine all ingredients.
- Marinate for 12-24 hours.
