"This is my Mom's Ratatouille recipe that she has made for years. It took me about 23 years to like it, but now I love it. We decided a big bowl of vegetables would be scary for kids, but it is delicious!"

  • Add oil, garlic, and onion to large pot. Cook until onion becomes almost translucent.
  • Add sliced eggplant, mushrooms, and squash and cook for another 3 minutes.
  • Add diced tomatoes, and allow to cook until everything is tender, about 20 minutes.
  • Add sugar, salt, and pepper to taste.
  • Prepare rice to serve under the Ratatouille, and enjoy!
