Mom's Peanut Brittle

Mom used to make this peanut brittle every Christmas. She would give it to neighbors as a gift. Now I do the same.

I always enjoy making candy, I guess because I can then eat what I want (or keep what I want, let's say) & give the rest of it away! Did the same with this brittle, keeping about half of it & the rest went to share with the art department in the local college! You have a great tasting peanut brittle here, & I'll be keeping the recipe around to make again! Thanks for sharing it!   1. Butter cookie sheets or foil (3-4 ft long). Make sure it is on a heat resistant surface or use layers of newspaper between counter and foil.
  2. Combine sugar, karo syrup, and water in a large pot. Cook until the temperature reaches 268.
  3. Add the peanuts, stirring constantly until golden brown or 300 degrees.
  4. Remove from heat. Add butter, salt, and baking soda. Blend thoroughly and turn out onto prepared foil or pans. Spread fast as it begins to cool quickly.
