Mom's Oven Rice

Mom used to make this rice and I have no idea of the origin of the recipe. It is very similar to the Mushroom Rice Casserole except this has green peppers and no mushrooms.

The taste is really good. It's so creamy. I used red bell pepper. I had to add more beef consommee cause it was dry and sticking to the bottom on the dish when I was stirring it. Thanks GibbyLou :) Made for Alphabet tag game

Directions

  1. Preheat oven to 350.
  2. In a large skillet or pan, saute onion and green pepper in oil.
  3. Add mushroom soup and heat.
  4. Stir in rice and beef consomme.
  5. Pour into a greased casserole dish.
  6. Bake uncovered 1 hour stirring a couple of times.
