A delicious light coleslaw that goes really well with bar-b-que! This recipe was given to me by my mother-in-law who makes it often especially during the summer.

  1. In a 10-cup or larger glass or plastic bowl, whisk together olive oil, vinegar, water, sugar, salt, black pepper, and celery seed.
  2. Add cabbage, red bell peppers, and onion.
  3. Toss well to combine.
  4. Refrigerate at least 1 hour to marinate.
  5. Leftovers keep up to 1 week in refrigerator.
