I love mom's okra! QueenKungFu was looking for a non-slimy version...here it is! :) (Cornbread is a must with this!)
- 2 slices bacon, chopped
- 1⁄2 cup onion, chopped
- 10 ounces okra, frozen and sliced
- 14 1⁄2 ounces stewed tomatoes, diced
- Sautee bacon and onions in a large frypan.
- Add okra and tomatoes.
- Turn heat on low and cook until okra is tender.
Thank you so much for sharing your mother's unslimy recipe with me. LOL. I loved the bacon in here and I used center cut to bring down the fat content. I served it with cornbread and your mom is right! It's the perfect accompaniment to this dish. I will have to put this dish in my diet cookbook because it is a great dish for dieters. Thanks again.
