Mom's Marvellous Macaroni & Cheese

This is the most amazing macaroni recipe EVER. My mother found it in a Mennonite cookbook, and now it is a staple at every family gathering, potluck, cookout, etc. It's easy to make & can be prepared a day ahead. YUMMY!!!

  1. Cook macaroni until just al dente. You don't want it mushy! Drain and rinse.
  2. Combine cottage cheese, sour cream, salt, cheese, and macaroni. Mix well.
  3. Pour into 2-quart casserole dish. Sprinkle with paprika.
  4. Bake at 350 for 45 minutes.

This was creamy, cheesy perfection! I used a little more cheese than called for, with a layer on top. Also put in a couple green onions chopped finely. Definitely no left-overs, there was a fight for the last noodle. Thanks for the recipe!

This was good. The kids liked it, but I think they would have liked it better without the sour cream or if I used American cheese instead. Otherwise, I really liked the texture, more dry than wet. Thanks for sharing!

This is so GOOD.I ate until I could not eat anymore.I did cut the recipe in half {only 2 of us} But still used the 2 cups of cheddar, had a piece of parmesan, so through that in with a bit of cream.Cooked about 30 min.I would recommend this to everyone. Thanks;Emmylynn and to your mom.
