Mom's Lentil Sausage Casserole

I use vegan sausage for this one! I also just double the recipe to use a whole package of lentils (2 cups dry) Usually with just 1 lb of vegan sausage, 2 14 oz cans of fire roasted organic diced tomatoes, red wine (or sherry).

  1. Put lentils in large pot and over with salted water.
  2. Boil, then cover and cook about 20 minutes (or until done). Reserve liquid if desired.
  3. Heat oil in large baking dish, stir in chopped onions and garlic.
  4. Cook until tender.
  5. Add canned tomatoes.
  6. Cut vegan sausage into 1/2 inch slices.
  7. Toss sausage with tomato mixture, add lentils, sugar, salt and pepper and bay leaf.
  8. Bake 350 degree oven about 30 minutes.
  9. Add reserved liquid or use 1 small can of V-8 or wine, sherry if dry.
  10. Great!
