  2. We loved this. I used spinach instead of lettuce and omitted the tomatoes. My nephew even helped himself to seconds.

  4. Loved this salad, especially the fruit combination. (We left out the coconut because of personal preferences) I'll have to work on the amounts in the dressing, but we all really enjoyed the combination. Thanks so much for sharing.

The unique thing about this salad is the wedding of a non-sweet dressing and typical green-salad components (lettuce, tomatoes, scallions) to fruit salad type ingredients like bananas, raisins and coconut. I wasn't sure what to expect, but it turns out they complement each other beautifully. Adding bananas in the form of banana chips to supply some crunch is an inspired touch. (I dispensed with the bacon bits.) Unique and fabulous!
