Mom's Cranberry Cookies

I always looked forward to these at Christmas. They are a nice "adult" cookie--not real sweet and the fresh cranberries give them an ever-so-slight tartness.

  1. Combine sifted flour, salt, baking powder and baking soda in one bowl.
  2. Set aside.
  3. Cream together shortening and sugars in another large bowl.
  4. Add beaten eggs, vanilla and nuts.
  5. Gradually add flour mixture from the first bowl.
  6. Work in chopped cranberries.
  7. Divide mixture and roll into 3 logs approximately 1 1/2-2 inches in diameter.
  8. Add a few drops of water if necessary for cohesion.
  9. Wrap each in plastic wrap and freeze.
  10. To bake, preheat oven to 375 degrees.
  11. Unwrap and thaw logs slightly.
  12. Cut into 1/4 inch slices.
  13. Bake on lightly greased cookie sheet for 10-12 minutes.
  14. Cool on a rack.

I wanted a recipe so that I could use up the left over fresh cranberries from Thanksgiving. I will buy extra cranberies next year to make more. I love them. Karen
