ingredients
- 1 lb dried navy beans
- 1 1⁄2 cups onions, chopped
- 2 teaspoons vinegar
- 1⁄2 teaspoon dried mustard
- 1 tablespoon brown sugar
- 1⁄4 cup molasses
- 1⁄2 cup ketchup
- 1 cup water
- 1⁄2 teaspoon pepper
- 1⁄4 lb bacon
directions
- Rinse beans. Soak overnight in 4 cups of water.
- Drain, measuring water. Discard the soaking water and add fresh water in an equal amount. (This makes the beans less 'gassy').
- Add remaining ingredients except bacon.
- Bring to a boil and cook for 1 1/2 hours. Remove from heat.
- Cut bacon into 1/4" pieces. Stir into the beans and put the mixture in a 10 cup casserole or a bean pot.
- Bake, covered, at 250F for 7 hours.
- After 4 hours, remove one cup of beans, mash and stir back in to thicken juice.
- Check occasionally during cooking and add a little more hot water if it starts to get too thick.

I am a housewife and mother of a beautiful son and twin daughters. I have a 6 month old grandson. I have self-published a cookbook, titled "Mom's Cookbook", and have sold over 300 copies, some as far away as Hong Kong. I am currently working on a second cookbook, aimed at today's young people, who don't seem to be getting any training at home.
