I love this recipe! My mother would make this in the summer when the zucchini came right out of the garden. She would make several loaves and freeze them. It’s a great breakfast in the toaster with just a little bit of butter.

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl.
  3. Pour into greased and floured loaf pans.
  4. Bake for 55 to 60 minutes.
  5. Make 2 large or 3 small loaves.
