Momma's Special Pancakes

"I gave my pancakes a makeover and added a special ingredient: Sprite. Sounds unusual, but once you try it, you won't make pancakes the regular way any more."

  • 2 eggs
  • 236.59 ml milk
  • 118.29 ml Sprite (can use any type lemon-lime flavored carbonated beverage)
  • 36.97 ml vegetable oil
  • 414.03 ml self-rising flour
  • 36.97 ml sugar

  • Preheat a lightly greased non-stick griddle to 300°.
  • Beat eggs with a wire whisk and add milk, Sprite and oil. Whisk until frothy.
  • Add flour and sugar and whisk until completely mixed. (There will be small lumps.).
  • Pour by 1/3 cupfuls onto hot griddle and cook about 1 minute or until golden brown on underside. Flip and cook 45 seconds or until golden brown on other side.
  • Serve with favorite toppings.

  1. Enjoye this recipe! Had some extra Sprite Zero that needed to be used, so tried this. Made 3 batches and have them in the freezer as my 3 year old wants pancakes every morning. The whole family likes them! Next time, might try to sub in some whole wheat flour.

<p>I am a stay-at-home mom to three great kids. Their ages are 6, 4, and 2 months. My oldest started school this year, but I still love getting to stay home with my other two. When I get some me time, I love surfing the internet, reading and watching T.V.</p> <p>I'm not that great of a cook and don't cook that often. Honestly, I mess up dishes more often than not, so I almost always do super-easy foolproof meals...like hot dogs and fries. I would love to be the mom that can make anything from scratch...but I have a long way to go.</p>
