- 1 tablespoon butter
- 1⁄3 cup orange juice
- 1⁄3 cup molasses
- 1⁄2 teaspoon ground ginger
- 1 teaspoon orange zest
- 1 lb carrot, peeled and sliced
- Melt butter in heavy saucepan.
- Stir in remaining ingredients.
- Add enough water to cover carrots and bring to boil.
- Reduce heat and simmer, uncovered, until liquid is reduced, 10 minutes.
