This is the quickest way I know of to do salmon, and the easiest, too. The mayonnaise keeps the salmon moist and it never tastes fishy.
- Pat salmon pieces dry with paper towel, then put them on a broiler pan.
- Sprinkle salmon with salt, pepper, and oregano.
- Use a butter knife to "pat" a thin layer of mayonnaise on each salmon portion.
- Set the broiler to high and place the salmon on the middle rack for 5 minutes. Then set broiler to low and broil for another 5 minutes.
