This is the quickest way I know of to do salmon, and the easiest, too. The mayonnaise keeps the salmon moist and it never tastes fishy.

  1. Pat salmon pieces dry with paper towel, then put them on a broiler pan.
  2. Sprinkle salmon with salt, pepper, and oregano.
  3. Use a butter knife to "pat" a thin layer of mayonnaise on each salmon portion.
  4. Set the broiler to high and place the salmon on the middle rack for 5 minutes. Then set broiler to low and broil for another 5 minutes.
  5. Done.
