Mock Scrambled Egg (Tofu) Wrap - Vegan

Makes a great breakfast wrap.


  1. Melt the butter in a medium sauce pan. Add the red onion and sauté until translucent (about 3 minutes). Drain the tofu and pat off some of the remaining moisture with a few paper towels. Add the tofu, the garlic powder, and turmeric to the sauce pan. Use a spoon to break up the tofu into small chunks that resemble scrambled eggs. Heat the mixture until warmed all the way through. In a separate frying pan heat up the flour tortillas. Spread the tortilla with some veginase and the tofu scramble. Top with a couple of slices of tomatoes per wrap.
