Try grating the zucchini instead of chopping and add pineapple extract.
I had put in a rating on this earlier, that it tasted gross. It didn't show up though! I think that it might be a little different if you can find concentrate, because I used pineapple juice out of a tin can, and that juice usually tastes bad anyways.
This recipe is great for using your bumper zucchini harvest! I peel and seed my biggest zucchinis (you know, the ones that look like baseball bats!) and then cube into about the size of pineapple chunks. I also add pineapple extract sometimes (if I have it). Makes great pineapple upside down cake too! Tastes just like pineapple!
