While I'm not on any type of diet, this still made a wonderful side dish!!! I tripled the recipe and glad I did because it disappeard. I seasoned it with salt, pepper and garlic powder. This is a different way to prepare cauliflower...we loved it! Thanks for sharing. :-)

Well I'll be!! What a delightful little surprise this dish was. It is so nice to have a new way to prepare cauliflower. Very creamy and quite tasty! Thanks for this great recipe :)

I boiled my cauliflower in chicken broth til very soft , drained the broth and added remaining ingredients plus chopped chives. I used an old fashioned potato masher. I placed mixture in casserole dish, topped with cheddar cheese and baked til melted. UMMMMMMMMMMM.

AWESOME!!! I have been trying different recipes to TRY to get my husband to eat vegetables...He really enjoyed this one!! And this is a man who is so hard to cook for when it comes to his veggies...THANKS SO MUCH!! We are not even on a low carb diet!!!

I didn't use the blender (don't have one right now). So my texture was a little off. The flavor was dead on, and everyone ate them despite the textural problems. I can't wait to try them again with the blender.

Excellent. I made these vegan by using Earth Balance Margarine and plain soy yogurt (in place of the sour cream). I also boiled my cauliflower in veggie broth and added a little all purpose seasoning instead of salt and WOW am I happy with the results. I could not get mine to blend in the blender, so I just used an old potato masher. Thanks for posting.

We really enjoyed this as a substitute for mashed potatoes! Though, I did overeat and puff up like Violet Beauregarde after these, but that's not your fault! Thanks for the recipe, definite do-again!

As far as caulk-potatoes go, this was a winner! I added some of the creamy baby bel chipolte spreadable wedges (3) & my non cauli-loving family ate every single bite! Thanks!

This was good. I also added some cheddar cheese when preparing this. I liked it very much, another great way to prepare cauliflower as a side.

I thought this was really yummy! Although you can make the cauliflower look exactly like mashed potatoes, they don't taste exactly like them however. But what can you expect? A cauliflower is not a potato. This was a delicious and healthy vegetable side which I will probably make in the future.

Pretty good overall. Mine did turn out a little watery so I think I will use more cauliflower next time and maybe try the cream cheese that was suggested in place of the sour cream. Otherwise the flavor was very good. My blender didn't do a very good job of making them smooth so a potato masher may work better next time. Thanks.

This tastes amazing. I had been looking for a mashed cauliflower recipe after having Ruby Tuesdays' version. Let me tell you, this version is much better--so good that I'd make it for company.
