Mocha Cheesecake

BASE
- 1 1⁄2 cups chocolate wafers, finely crushed
- 1⁄3 cup butter, melted
- 1⁄2 tablespoon sugar

FILLING
- 2 squares sweet chocolate (1 oz each)
- 2 (8 ounce) packages cream cheese, softened
- 4 eggs
- 3⁄4 cup sugar
- 2 -3 teaspoons instant coffee
- 1 dash salt
- chocolate cookies (to garnish)
- raspberries or other berries (to garnish)
- chocolate leaves (to garnish)
directions
- Combine wafer crumbs, butter and sugar. Butter sides and bottom of 8-inch springform pan.
- Press crumb mixture evenly onto bottom of pan.
- Melt chocolate over hot, but not boiling, water. Stir until smooth.
- Beast cream cheese until soft and smooth. Add eggs one at a time to cream cheese. Gradually add sugar, mixing until well blended.
- Preheat oven to 350°F.
- Add melted chocolate, instant coffee and salt. Stir until blended.
- Turn mixture into prepared pan. Bake cake at 350F in center of oven for about 40 minutes or until cake center is almonst set. It will firm when chilled.
- Let cheesecake cool on counter for 45 minutes. Cover and chill for at least 4 hours or overnight.
- Remove sides of pan. Garnish with berries and chocolate leaves - DELICIOUS!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
