Mocha Cheesecake

  • BASE

  • 1 12 cups chocolate wafers, finely crushed
  • 13 cup butter, melted
  • 12 tablespoon sugar
  • FILLING

  • 2 squares sweet chocolate (1 oz each)
  • 2 (8 ounce) packages cream cheese, softened
  • 4 eggs
  • 34 cup sugar
  • 2 -3 teaspoons instant coffee
  • 1 dash salt
  • chocolate cookies (to garnish)
  • raspberries or other berries (to garnish)
  • chocolate leaves (to garnish)

  • Combine wafer crumbs, butter and sugar. Butter sides and bottom of 8-inch springform pan.
  • Press crumb mixture evenly onto bottom of pan.
  • Melt chocolate over hot, but not boiling, water. Stir until smooth.
  • Beast cream cheese until soft and smooth. Add eggs one at a time to cream cheese. Gradually add sugar, mixing until well blended.
  • Preheat oven to 350°F.
  • Add melted chocolate, instant coffee and salt. Stir until blended.
  • Turn mixture into prepared pan. Bake cake at 350F in center of oven for about 40 minutes or until cake center is almonst set. It will firm when chilled.
  • Let cheesecake cool on counter for 45 minutes. Cover and chill for at least 4 hours or overnight.
  • Remove sides of pan. Garnish with berries and chocolate leaves - DELICIOUS!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
