We all found the dressing too strong. I used the freshly squeezed lemon juice option. Made for Ramadan Tag 2010.

  1. Whisk dressing ingredients together in a small non-reactive bowl.
  2. Seed and stem the anaheim chilies.
  3. Toss chilies in olive oil with salt and pepper and set aside.
  4. Cover a small plate with a thin layer of olive oil and dip the slices of the halloumi cheese.
  5. Preheat grill or stove top grill pan until it is very hot. Grill tomatoes and prepared chilies, then cheese *just* until it shows grill marks. Remove cheese before it melts.
  6. Place the spring mix on a plate and add grilled tomatoes and chilies.
  7. Finally, garnish salad with halloumi cheese squares on top and pass the dressing.
