      An easy, tasty and healthy soup. You can't get much better than that. I sliced rather than diced because my hubby likes chunky soups. Other than that, I kept to the recipe and use oregano and basil as my herbs. That ended up making it a bit like a minestrone without the pasta. Made for the Zingo porition of ZWT5 for the Chow Hounds.

      This is a light, warming soup recipe. It would be excellent as either a light dinner or a starter soup as well. We felt like it was lacking something and wasn't as filling as a dinner soup should be. I think diced ham or bacon would really send this over the top! It's a great base to start with and the possibilites are endless. Thanks for a good soup recipe to fight off the cold Vermont winters! Made for ZWT5. :D

      I used basil, oregano, thyme as herbs. I also cut up half a hot red chili, as I always like to add spice. I used a bag of dried mixed beans from a bulk bin. The mix mainly included fast cooking beans such as red lentils, split peas, small black and white beans, and also barley. I added a lot more stock then specified in the recipe. I had some ham thawing to add, but by the time it thawed the soup was already done and delicious, and I thought no reason to add meat!

      This is a simply, tasty soup that is filling and satisfying. I agree, it is more like a stew, but I am sure you can add more stock to thin the consistency. I also sauteed the garlic, onion, celery, carrot and leek in some olive oil before adding the other ingredients. Since the recipe did not specify, I seasoned with herbs de provence.       This is a lovely recipe so suitable for the cold weather we are having in my part of the World! Mine was more of a stew than a soup in the end which was just fine. I am annoyed with myself that I didn't bake a loaf of bread to go with it!! Thanks for a lovely recipe Brenda. Made for ZWT5 Zingo

      This is terrific, TRUE! Thanks for the tip Gerry999, I sauteed veggies too! Used oil spray to save extra fat and calories, This recipe certainly did please! On that coldish day, this soup is more than ok! :) THANKS!

      So different from the usual bean soups and in that it is also really good it's a five at our house. Yes made for a delicious chilly day lunch. I did saute the veggies in a little oil - because it's how I usually start all my soups. For the herbs used thyme and tossed in some fresh parsley. My cans were 19 ounce cans - that worked well for me. The leek is a wonderful addition, chopped in some of the green for added color. Thank you Brenda, we enjoyed lunch.

      Lovely winter soup - perfect comfort food for me !! I can never find blackeyed peas in Australia so used a tin of cannellini beans with a perfect result also threw in a tiny handful of angel hair pasta that needed to be used up - made for PAC 07 - thankyou to bigbadbrenda_Mama for posting this delish soup.
