I got this recipe almost 20 years ago from my friend, Miriam. Unlike many apple cakes, it is a breeze to make. The cake is dense and delicious.
- 3 eggs
- 1 1⁄2 cups sugar
- 1 cup oil
- 2 cups flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 6 apples, CUBED
- 1⁄2 cup chopped walnuts (optional)
- Mix everything together with a FORK in this order: eggs and sugar; dry ingredients alternating with oil; apples; walnuts.
- Bake in a 10" x 4" loaf pan at 350F for 60 minutes, or until done.
This cake came out perfectly - moist and delicious. I used Rome apples. Thanks!
This cake was the BOMB! I made it in a bunt pan. It did require extra cooking time, but turned out great! I took it to work and my co-workers LOVED it! I will save this recipe and make this again, and again.
I thought this was so moist and delicious! My husband asks me to make it again and again! I do agree with others that it does need extra baking time, at least 1 hour or until toothpick comes out clean.
