Mississippi Fudge Cake

ingredients
- 4 eggs
- 1 1⁄2 cups butter or 1 1/2 cups margarine, divided
- 2 cups sugar
- 1 1⁄2 cups flour
- 2⁄3 cup cocoa, divided
- 1 dash salt
- 1 cup pecans, chopped
- 2 teaspoons vanilla, chopped
- miniature marshmallow
- 1 lb powdered sugar
- 6 -8 tablespoons milk
- 1 teaspoon powdered instant coffee

CAKE:
- Melt 2 sticks butter and 1/3 cup cocoa together. In large bowl, beat together eggs, 2 cups sugar, flour and salt. Add butter/cocoa mixture to bowl, add nuts and vanilla. Bake in greased 9x13 pan about 40 minutes at 350°F Remove from oven and cover with miniature marshmallows while cake is still hot. Let cool before adding icing.
- ICING:.
- Sift 1/3 cup cocoa, coffee and powdered sugar. Add 1 stick melted butter, milk and 1 teaspoons vanilla - beat well and spread over cake.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
