My friend Caroline gave this recipe to me. This recipe combines the gooey sweetness of pecan pie with the chewiness of coconut. It is delicious!

This is like a buttermilk pie with coconut, but with a little chewyness to go with the creamyness. I know that sounds funny, but it was very good combination of flavors and textures.

  1. Combine all ingredients, except for crust.
  2. Pour mixture into crust.
  3. Bake in a 350 degree oven for 50 minutes, checking towards end to prevent burning.
