  • 1 teaspoon instant dashi stock
  • 4 cups water
  • 4 tablespoons shiro miso
  • 14 cup dried wakame seaweed
  • 12 cup soft tofu, small dice
  • 2 scallions, sliced

directions

  • Heat up about 1 1/2 cups water to simmer for soaking the wakame.
  • Turn off and add dried wakame until soft and ready to add to soup.
  • Boil 4 cups water.
  • When boiling add 1 tsp instant dashi.
  • Let boil for 2 minutes and add scallions and tofu.
  • Put 4 Tblsp miso paste into small bowl or glass.
  • Add some of the dashi broth to make a "slurry" BEFORE adding to broth.
  • Add "slurry" to broth.
  • Let boil 1 minute & REMOVE from heat.
  • Add soaked wakame to broth and pour mixture into serving bowl.
  • Enjoy!
